As it came off the vineyard, all the fruit was immediately crushed to press and the bright, clear juice was left to cold settle for 48 hours. After cool fermentation for three weeks the wine was racked and kept on light lees for four months until bottling. We bottled this wine early to retain maximum freshness and aroma. This resulting O:TU Single Vineyard is a full bodied Marlborough Sauvignon Blanc which builds up and ends on a long, ﬁne and appetising mineral ﬁnish.Flavours of white peach, honey melon, light exotic characteristics ripe greens, gooseberry, currants and ﬂinty minerals
