The Gavi of tradition, where Cortese shows all its unmistakable sapidity. Straw yellow with green hints, with a fine mineral feel and notes of fruit and white flowers. Lively and balanced, with a fresh acidity that lengthens its persistence and drinkability, finishing with a hint of almond. Grapes are handpicked in mid September, then fermented and rested in stainless steel to protect that freshness, with about six months on lees followed by a short bottling rest before release. Farmed biodynamically, like everything at La Raia.
