Only fitting that we feature this, the Grower champagne that piqued Liz Wheadon's interest when she tried it a number of years back. It's 100% Chardonnay sourced from the villages of Chavot, Vaudancourt, Voipreux and Epernay. Initial fermentation was carried out in a combination of foudres and barrels, with lots of lees stirring. It's the lees stirring that provided the palate with its impressive breadth and complexity.
