Taburnum takes its name from the terraces on which vines have grown here since Roman times, one of three ancient Seyssuel crus celebrated by Pliny the Elder and revived by Les Vins de Vienne's three founding winemakers. Fruit comes from a 1.5 hectare parcel on schist and quartzite soil, south to south west facing hillsides above the village. Balanced and expansive, with aromas of white flowers and white fruit and a spiced edge. Vines average 20 years old and are hand harvested, whole bunch pressed, then fermented at low temperature with indigenous yeasts in barrels and foudres before 16 months ageing on lees in French oak. Best with a thyme crusted pork fillet, foie gras, teriyaki chicken or a young picodon.
