The fruit for the Sutherland-Till Vineyard Chardonnay was handpicked, whole bunch pressed and fermented with indigenous vineyard yeasts in 450-500L puncheons. Primary and malolactic fermentation went over 10 months. Aromas of goldenrod, acacia, honeydue melon and a slight buttered popcorn note. There's a lively struck stone minerality that prevents a toppling into richness and reignites energy and interest.
