Auxerre, the region from which these excellent value sparkling wines hails, lies but a limestone's throw from Chablis village itself, and was for a long time the key winegrowing area of the Yonne district. Being bottle-fermented à la champagne, these wines age in cellars 50 metres below the ground. The primary and secondary fermentations and disgorgement are carried out in the same fashion as the more expensive Crémants, but the price is much more reasonable.
