For decades, hopologists have been analysing the alpha acids and oils from the beloved hop to create hard facts and data on the predictability of hop aroma. They have come ever so close, yet so far from cracking the hop code. Then you throw fresh wet Nelson Sauvin hops into the mash tun straight after harvest, and any lupulin theory goes out the window, with the artist and the philosopher coming to the rescue.
