For Champagne's female cellar masters, the glass ceiling
is often made of polycarbonate. Shrouded in mystique, the arcane world of the chef de cave can be hard to crack, but there is a small group of women who have made their way in via a combination of determination and talent. Among them are Ayala's Caroline Latrive, J. Lassalle's Angéline Templier and Perrier-Jouët's Séverine Frerson, each of them currently steering their respective cuvées to greatness.
