Javier Hidalgo runs the Bodega in the sixth generation. After studying biology and agriculture at the University of Seville only one career seems suitable: continuing the family tradition. Thus, Hidalgo-La Gitana is one of the few sherry manufacturers which is still completely in family hands. Hidalgo masters the difficult task of reconciling the sherry production which is bound to tradition and for which patience and manual work are irreplaceable, with the requirements of modern management.
